Ingredients

  • 12 oz (340g) fettuccine or pasta of choice
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup pasta water (reserved)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped
  • Extra Parmesan for garnish

Instructions

  • 1
    Cook the pasta
Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  • 2
    Sauté the garlic
In a large skillet over medium heat, melt butter. Add minced garlic and cook for 1-2 minutes until fragrant, stirring constantly to prevent burning.
  • 3
    Make the sauce
Pour in heavy cream and bring to a gentle simmer. Reduce heat to low and whisk in Parmesan cheese gradually until smooth and creamy.
  • 4
    Season the sauce
Add salt, black pepper, and red pepper flakes (if using). Stir to combine. If sauce is too thick, add reserved pasta water a little at a time.
  • 5
    Combine pasta and sauce
Add drained pasta to the skillet. Toss to coat evenly in the creamy sauce. Add more pasta water if needed for desired consistency.
  • 6
    Garnish and serve
Top with fresh parsley and extra Parmesan cheese. Serve immediately while hot and creamy.
